More Chocolate! Kentucky Derby Pie
Sep. 4th, 2008 11:34 pmAs if I've ever gone to the Kentucky Derby~
-1 stick butter or cooking margarine
-1 cup sugar
-1 cup pecan or walnut bits
-3/4 cup chocolate chips
-1/2 cup self-rising flour
-1 teaspoon vanilla extract
-2 eggs, beaten
-1 deep pie crust
Preheat the oven to 350 F and make sure the rack is between the top and middle position. Melt the butter on the stove and remove from heat. While it's melting, prepare the crust according to packaging direction (if it has special instructions for 'high sugar pies' follow those) and crack those pecans if you didn't buy then already broken up. Add the sugar, flour, eggs, and vanilla once you pull the butter off the heat. Mix well and check the bottom to see if it's still hot. When it's cool to the touch, add the nuts and chocolate and mix those in. Pour it in your pie crust and put in the oven for 30 minutes. It won't look done, but it is!! Take it out!! Now!!
Give it an hour or two to cool and congeal--it's molten sugar right now and basically lava...
Store in the fridge--about 12 seconds in the microwave is enough to reheat a slice....
